Easy Chicken Enchilada Recipe

Easy chicken enchilada recipe:

You will need:
-10 tortillas (I use Misson Grande Fajita tortillas)
-One 19oz can of enchilada sauce or two 10 oz cans (I use Old El Paso mild red sauce)
-1 pound of boneless chicken breasts cooked
-2 cups of shredded Mexican blend cheese
-13×9 baking dish (coat with non stick cooking spray, I use Pam Olive Oil cooking spray)

How to prepare:
-Preheat oven to 375 F
-Shred cooked chicken breasts either by hand or in food processor
-Put chicken in mixing bowl. Add 1/2 can of enchilada sauce if using 19oz can or 1 whole can if using 10oz can and mix well
-Add 1 cup of shredded cheese to bowl and mix well
-Add 1 spoonful of mixture to each tortilla, roll tortilla and put in baking dish
-Pour remaining sauce on top of filled tortillas
-Sprinkle remaining cheese on top of filled tortillas
-Bake for 15-20 minutes (sauce should be bubbly and cheese nice and melted)
-Let cool for 5 minutes and enjoy!
