If you have been on the paleo diet for a bit, you will probably notice there are quite a few amazing meals you can’t eat. This recipe helps bring back some of those great dishes but in a healthier way.
The ingredients I use in this fried chicken recipe are listed below:
• 4-5 Chicken Pieces
• 2 Eggs
• 1 Cup almond flour
• 1 tsp. paprika
• ¼ tsp thyme (dried of fresh)
• 1 tsp. Salt
• 1 tsp. Pepper
• Coconut oil or another paleo friendly oil
If your oil is too hot you will find that the coating of the chicken will start to burn whilst the chicken remains raw. I recommend taking the chicken out and letting the oil cool a bit before continuing to cook.

If you want the chicken to be a bit crispier then you could try adding some shredded coconut to the almond flour mix. This will help to create a crispier coating when you fry the chicken up.
