Skinless Oven Fried Chicken


You’ll need four Chicken legs quarters. (Or eight pieces of chicken…
You can also break down a whole fryer)

One egg.

1/4 cup of milk

As well as about 1/4 cup olive oil.
(equal parts egg, milk, and oil)

1 1/2 cups of Flour.

2 teaspoons of garlic powder

1 teaspoon of oregano

1/2 teaspoon of cayenne (or to taste)

1 teaspoon of thyme

1 teaspoon of paprika

2 teaspoon of sea salt (you’ll probably need to adjust, using less, the amount of salt if you are using regular table salt.

1 teaspoon of cracked pepper.

Preparation Time: 20 minutes
Cook Time: 60-75 minutes at 375°/190°
Serves: 4

  1. I am going into the kitchen right now to make this! I only have one breast so I will adjust the recipe & time. I’ll let you know how it turns out. I am not cooking a leg but will you kindly clarify (4:25 – 7 min) what you mean by, testing done-ness by the grizzle end of a drum stick, for future reference. I always have trouble determining when chicken is done. Your voice and manner are entirely soothing…which is what I need for cooking. Your instructions are so very clear. I’ll look forward to watching some more videos! Oh, one more question, please…you use 375 degree oven – is this so it gives the chicken and coating a chance to cook slowly and evenly? If not, can someone use 425 degree and just cook for a shorter time? Thanks for taking the time to post this great recipe and for all your help.
