White Wine Chicken


This easy white wine chicken recipe is rustic and delish, my two favorite things to wow any kind of guest!

INGREDIENTS:
3 lbs chicken thighs and drumsticks or both
salt and pepper
1 Tbsp extra virgin olive oil
1 medium yellow onion, diced
2 carrots, peeled and finely diced
2 stalks celery, finely diced
2 cloves garlic, minced
1 cup of dry white wine or dry vermouth
2 cups low-sodium chicken broth
2 bay leaves
1 Tbsp Herbes de Provence (or 1 tsp each of rosemary, thyme, basil and oregano)
¼ cup heavy cream or half-and-half
salt and pepper to taste
2 Tbsp cornstarch + ¼ cold water
2 Tbsp fresh chopped parsley
